The "it works on my machine" approach eventually breaks a startup. How do you manage your ops?

Curious to see how other technical founders here are managing the day-to-day operations of their software.
It is easy to spend all of our energy writing code or adjusting landing pages, but I have been spending time lately mapping out a strict "Operator's Field Manual" for my setup. Basically, I am documenting the exact, step-by-step procedures for things like deployments, system reboots, and server management so everything runs predictably without me having to guess under pressure.
For the solo developers and bootstrappers here:
Do you actually document your operational workflows, or are you just winging it until a server drops? If you do document it, what is your approach for keeping those procedures simple and actionable?
Would love to hear how you handle the practical side of keeping your systems running smoothly.
